Breakfast Burrito

Serving Size: 1 burrito

Ingredients

Non-stick cooking spray

1-1/2 cups egg substitute

4 6-inch flour tortillas

¼ cup picante sauce

½ cup shredded, reduced-fat, sharp cheddar cheese

Instructions:

1.      Place a small, non-stick skillet over medium heat until hot.  Coat the skillet with non-stick cooking spray and add egg substitute.  Cook, without stirring, until egg mixture begins to set on the bottom, about one minute.

2.      Draw a spatula across bottom of pan to form large curds.  Continue cooking until egg mixture is thick but still moist; do not stir constantly.

3.      Place tortillas on a microwave-safe plate and microwave on high 15 seconds or until heated.  Top each tortilla with equal amounts of the egg mixture.

4.      Spoon 1 TBSP picante sauce over the egg on each tortilla.  Sprinkle with 2 TBSP of shredded cheese and roll up.
